Double Trouble Chocolate Chip

A friend of mine made these cookies this past weekend and they are awesome!!! They are simple to make and are really good. Just make sure your kids don’t eat too many or you’ll never get them to sleep. ; - )
Dark and chewy with a deep chocolate flavor, these lumpy, bumpy cookies are filled with large pecan pieces and spotted with a mosaic of dark chocolate chunks. Use high-quality chocolate bars broken into half-inch irregular pieces.
Make your own Double Trouble. Use this recipe as a jumping-off place to customize your chocolately chip cookie. Substitute hazelnuts or macadamias for the pecans. Use white chocolate chunks instead of semisweet, or add milk chocolate chips.

Ingredients:
- 4 ounces (1 stick) unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened cocoa
- 1 large egg
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1 cup (6 ounces) bittersweet chocolate chunks or chips
- 1 cup (3 1/2 ounces) large pecan pieces
- Makes about 28 cookies
Directions:
- Preheat oven to 350 degrees F.
- In a medium bowl, using an electric mixer, beat the butter, sugars, salt, and vanilla until well combined. Beat in the cooa, then the egg. Scrape down the bowl using a rubber spatula and beat for a few more seconds.
- In a small bowl, whisk together the flour and baking soda. Add the dry ingredients to the wet mixture and mix on low speed just until absorbed. Combine the chocolate chunks and nuts in a small bowl and stir into the dough.
- Shape the dough into 1 1/2 inch and drop them about 3 inches apart onto ungreased baking sheets. For perfectly uniform cookies, scoop the dough using a 1 1/2 inch diameter ice-cream scoop, leveling the dough off across the top before dropping onto the baking sheets. Bake for about 10 minutes, or until the cookies begin to color (you’ll have to look carefully).Let sit for 5 minutes, then transfer to wire racks to cool completely.
Let the following combinations inspire you to create your own Double Trouble, using the proportions given above (1 cup or chunks or chips with 1 cup of nuts per one full recipe).
- White chocolate chunks with pecans and/or dried cranberries
- White chocolate chunks with macadamia nuts, toasted and coarsely chopped
- Milk chocolate chunks with dry roasted peanuts
- Dark chocolate chunks with walnuts
- Half white and half dark chocolate chunks with walnuts or pecans
